Are Professional Book Publishers the Right Way to Go?

Hello, I’ve just completed a manuscript and I’m now looking into Professional Book Publishers. I haven’t submitted to anyone yet because I’m not sure how involved they are in helping new authors.
Do they work with unknown writers or only established names? How much input do I get if I go that route?
If anyone started with a publisher, how was the experience starting from scratch?
